1/2 cup amaranth, 1 1/2 cup chicken broth, 1 1/2 lb ground chicken, 1/2 cup cottage cheese, 2 whole eggs, 1/2 cup raw rolled oats, 1/4 cup finely chopped carrots, 1/4 cup finely chopped spinach, 1/4 cup finely chopped zucchini, 2 cloves garlic, 1 tbl olive oil.
Bring amaranth and chicken to a boil. Reduce heat and simmer for 20 minutes. Cool. Preheat oven to 350 degrees. In a mixing bowl add meat, cottage cheese, veggies, and eggs. Mix. Add wheat germ, cooled amaranth and olive oil. Mix and add to loaf pan. Bake at 350 degrees for 1 hour.
